Crawfish-Crayfish-Crawdads

Louisiana is famous for crawfish. Louisiana crawfish are usually boiled live in a large pot with heavy seasoning like salt, cayenne pepper, lemon, garlic and bay leaves. You can also add potatoes, corn on the cob, onions, mushroom and sausage. When we spent our remaining three months winter vacation, we went to Texas and some Chinese Buffet restaurant served crawfish.

Crawfish are freshwater crustaceans resembling small lobsters to which they are related. They breathe through feather-like gills and are found in bodies of water that do not freeze to the bottom; they are also mostly found in brooks and streams where there is fresh water running, and which have shelter against predators.

My friend from Texas can eat five plates of crawfish when they ate out at Chinese Buffet. She's really amazing! She can peel the crawfish faster than anyone I met and she loves eating them.
